Sugar Lab 3D Printed Valentine's Day Chocolate Confections
The best thing about Valentine's Day is the abundance of sweets available on the market. Today, the delicacy is easy to print on 3D technology, which is what Californian digital bakery Sugar Lab took advantage of, launching the release of an exquisite and romantic collection of chocolates dedicated to the holiday in honor of St. Valentine. The line includes products made on 3D equipment:
- heart-shaped sweets;
- sugar cubes;
- truffles;
- cocktail bitters.
An original find - shell-shaped treats that are empty inside and are designed to be filled with rich cream or ganache. Sugar Lab made sure that romantics cancel their other Valentine's Day plans and get ready to satisfy their sweet tooth.

The mission of the patisserie is to bring culinary innovation under the guidance of experienced chefs in collaboration with a skilled digital design team using 3D chocolate printing.
How the idea of using additive technologies for the production of confectionery products was born
Founded in 2020, Culinary Printworks, a management company, creates individual tastes and designs for big brands, food service companies and professional chefs. The company's founder and his wife invented 3D sugar printing technology back in 2012. It was soon acquired by 3D Systems and brought to market last year. The joint team developed the industrial-grade Brill 3D Culinary Studio printer.

After years of testing culinary equipment, the idea was to make this amazing technology available to chefs and consumers around the world.
Sugar Lab's Brill printer uses inkjet printing principles, only the consumables used as the binder are edible. Together with food coloring, a viscous composition is applied to powdered sugar, which is flavored with special additives (for example, nutmeg or cinnamon). The result is original aesthetic and seductive fragrant treats. Printed desserts with unusual shapes and eye-catching colors that can be created using this method unlock the wide potential of 3D printed chocolate.
3D technology provides more design freedom. Now you can embody complex and beautiful masterpieces that really need to be seen to be believed. Equally important is that the equipment allows you to quickly change the design without the use of blanks. The manufacturer can easily brand and personalize existing designs, adding something unique to each client.
3D Printed Chocolates - A Special Treat
Sugar Lab hired a chef from the American Culinary Institute to create a festive series of 3D printed chocolates. Together they came up with a number of recipes for delicious and rich chocolate cream, placed in edible shells created on 3D equipment. Unpacked truffles will be a nice gift for Valentine's Day, as sweets are successfully combined with blended whiskey and champagne-based cocktails. 3D printed chocolates are complemented by interesting flavors such as PB&J (peanut butter sandwich) and S'mores (marshmallows). The collection also includes decorations for cupcakes and cocktails.

The most impressive variations are chocolate-drenched strawberry truffles and Broken Heart Puzzle candies with 6 different flavors. With the Strawberry-Covered feature, 3D-printed gingerbread strawberry-shaped gingerbread shells are filled with chocolate buttercream topped with Caramelized Honey Chili, Pineapple Cake, or Elder Tamarind.

There is also a chocolate mousse with an orange blossom scent, hints of Earl Gray and ginger notes. Each product offered is a completely original gift.

For a do-it-yourself dessert night, you can purchase a pack of vanilla romantic dessert halves and fill them with whatever your imagination tells you. Sugar Lab also offers a cake variant that is easy to make from these blanks. A heart-shaped rose pattern package from the digital bakery lab or a candy set with a cute teddy bear is available even to students.
The company has also developed rhombus or teddy bear cocktail bitters. The digital bakery has figured out how to shape liquid bitters into any shape a 3D printer can replicate, and for Valentine's Day, they offered customers cute little bears clinging to glasses of champagne.

Finally, for Valentine's Day, you can buy a set of six 3D-printed sugar cubes, as well as 6 popular Candy Hearts emoji with notes of lime, watermelon or lemon.
Sugar Lab plans to expand its product line this year to focus on weddings and other special occasions such as birthdays.

Culinary Laboratory 3DS
3D Systems-the first innovative culinary center in the world 3D printing, located on the corner Melrose and Highland, the epicenter of the Los Angeles culinary community.
The 3DS Cooking Lab opened this summer as a space for cooperative learning, collaboration and research - a place where the industry can experience the ChefJet Pro (Professional Food Printer) and where chefs, mixologists and culinary innovators can experiment with the combination of traditional culinary craft and 3D printing. This innovative hub will also frequently host events for leaders in the hospitality industry, gatherings of culinary communities, as well as symposiums and workshops that will explore and shape the range of 3D printed dishes.
Duff Goldman, Charm City Cakes
Chef Duff Goldman's "Ace of Cakes" is the original cake-making reality show. Duff can still be seen on his new show Duff Till Dawn and as a host at Sugar High. By the time Duff first got to the 3DS Cooking Lab, he was already experienced in 3D scanning brides and grooms for his cakes! Together we decided to develop a multi-tiered cake that would look like a traditional wedding cake. Clear geometric patterns decorate each tier, giving a completely unique look to the culinary masterpiece:
Matthew Biancaniello, Eat Your Drink
Matthew Biancaniello, industry renowned cocktail specialist and former mixologist at the Roosevelt Hotel's Liberty Bar, will be releasing his first cookbook, Eat Your Drink, this fall. As for the composition of drinks, which is highly dependent on the seasonal market and local ingredients, Matthew's cocktail creations rely heavily on savory. To test 3D Systems, he decided to create a cocktail that would whimsically combine the aromas of dried camphor milk mushrooms, bergamot and chamomile with tequila, kiwi fruit and freshly squeezed lemon juice. As a result of 3D printing, we got an acorn-shaped vase with miniature chamomile flowers and twigs around the edges:
Mei Ling
Season 12 winner of Bravo's "Top Chef" reality show, Mei Ling partnered with 3D Systems to create a 3D printing component to create an intricate dessert based entirely on the flavors of Hawaii and inspired by the beauty of the passionfruit flower.
The dish consisted of passion fruit pulp, caramelized banana English cream chilled to an ice cream consistency with liquid nitrogen, freeze-dried strawberry powder, bee pollen, yogurt, and sliced fresh bananas and strawberries. A thin perforated 3D printed interpretation of the passion fruit flower, flavored with the fruit itself, topped each serving. Mei suggested that guests crush the fragile passion fruit flower with spoons to combine flavor and texture in each bite.
Josiah Citrine, Mélisse Restaurant
Chef and co-owner of Mélisse, a 2-star Michelin-starred restaurant in Santa Monica, Josiah Citrine and chef Ken Takayama partnered with 3D Systems to create the appetizer. Chef Citrine was particularly interested in adding a certain flavor to the dish, and in an unexpected way, they decided to create an innovative version of the classic French Onion Soup.
3D printing has been tested on a traditional component - croutons, which were printed using aromatic onion powder. Chef Citrine combined a small bundle of onion petals and burrata cheese along with printed croutons and garnished everything with skoroda flowers and battered onions. To this was added oxtail broth, which turned the rich beef consommé into an incredible interpretation of the classic French onion soup.
Culinary Institute of America
The Culinary Institute of America (CIA), the country's preeminent culinary school, is partnering with 3D Systems to explore the intersection of 3D printed food and traditional artisanal cooking methods. Beginning with the establishment of a 3D food research lab at their Hyde Park campus using a ChefJet Pro 3D food printer, the partnership will also include a series of conferences and workshops for the KIA community, as well as fellowships and fellowships at the 3DS Culinary Lab in Los Angeles.
