Unicorn Factory: Maxim Kovalevsky and his Chocolate Fiesta

Do you believe in unicorns? We are definitely! From medieval fairy tales, they successfully migrated to the modern world. True, they changed their meaning a little. The term "‎Unicorns"‎ was introduced relatively recently for start-up companies whose capitalization exceeded $1 billion in a short period. Every year, an average of four new unicorns appear in the world.

We went looking for unicorns on the territory of the Polytechnic University. As part of a new special project dedicated to the Year of Science and Technology, we will introduce you to student startups that originated at the university as an idea and successfully broke into business.

The first hero of the Unicorn Factory special project was Maxim Kovalevsky and his 3D confectionery printing startup "Chocolate Fiesta".

Maxim Kovalevsky is a graduate of the Master's program at the Institute of Advanced Manufacturing Technologies (IPPT), the founder and current head of the Chocolate Fiesta company. He regularly plays football with the polytechnic community - classmates, young teachers, friends and colleagues. He also travels around Russia

Sweet Printing

Chocolate Fiesta is the first company on the Russian market to introduce 3D confectionery printing. 3D printers and teaches customers how to work with them.

Seven people work in the company every day: a sales manager, a purchasing manager, a printing engineer, a development engineer, an IT specialist, and two printer assemblers.

The company also provides an internship place for young professionals from the Polytechnic University. In the spring of 2020, three novice marketers from the Institute of Industrial Management, Economics and Trade completed an internship at Chocolate Fiesta.

Engineers' Evening Joke

How did you get the idea to print chocolate? Everything is elementary: it is enough to work in the department for the development of additive technologies at Polytech-Engineering. There, in a very unusual and informal press department, once Maxim's colleague brought chocolate syrup from Pyaterochka and printed a picture on a bun. Nobody appreciated this evening joke of engineers. And our hero caught fire with this idea.

And just in time, because at the beginning of the 2017 academic year, Maxim took the course "Computer engineering and digital production" as part of training at the IPPT. Each student could offer his own innovative idea, and the teachers chose the best ones from the list and contributed to their implementation. This is how the ideological teams gathered. In 2017, only four projects were chosen, one of which is 3D printing of chocolate under the guidance of Maxim. The team included nine people.

For several months, students have been hard at work on the layout of a 3D chocolate printer. And in 2018, they managed to get a long-awaited credit for an unstable printer. “We could have made a normal version much earlier, but there was engineering idealism. We wanted it to be really cool and — wow!” - recalls Maxim. We got the credit, but the inspiration remained - we decided to continue working on a working prototype, only now as part of seven people.

Then everything turned out by a lucky chance. Maxim worked in the field of additive technologies, the employer provided the guys with premises to work on the project. And IPPT teachers were happy to give feedback on technology, despite the fact that there were no more pairs in this discipline.

The team abandoned the first training prototype and made the second prototype almost from scratch. This variant sometimes fell apart during printing. But that didn't stop them either. After a series of failures in the development of the second prototype, the team was left with the five most charged students for success.

And on the third attempt, they decided to simplify the printer as much as possible. We created an MVP (Minimum Viable Product) using a simple, and most importantly, stable technology for printing 3D chocolate. Further, they simply finalized the product: the frame, the calibration system, sensors, and much, much more gradually changed. “Everything turned out to be much easier when we stopped reinventing the wheel,” recalls Maxim.

After two years of trial and error, in the summer of 2019, the first single-color printer was sold, and later, the first Russian two-color chocolate 3D printer was developed. It turns out that "‎Chocolate Fiesta"‎ is so far the only domestic company in this industry.

What is the filling?

Now the company works in two directions at once.

The first is the sale of professional chocolate 3D printers. The guys on average produce one printer per week. The client receives the equipment in his hands 10-14 days after the application, the exact date depends on the duration of delivery to the destination. Then the buyer is given a choice: to watch training videos on the Internet on their own or to request training from employees.

You need to start the printing process with a picture - it is loaded into a special program, a 3D model is created. Then, based on the model, the program generates a code for the printer. The printer is filled with chocolate, the model is sent to print.

The second is the printing of unique 3D chocolate gifts to order. The main advantage of technology is flexibility. Thousands of such unique gifts are not needed, so there is no need for wholesale chocolate molding, and handmade is too expensive and time consuming. 3D printing is great for printing 10-100 items. It takes only an hour to make a sketch in the program and agree with the client. You can start printing almost immediately. And the layer hardening time is only 40 seconds.

In three years of work and more than a thousand printed products, the most difficult order was the order from Moscow: the buyer asked to print fifty bridges of A4 size. Five printers printed the order for two weeks. And the order from the Khanty-Mansiysk Autonomous Okrug turned out to be the farthest - it took longer to deliver than it was printed.

A course within the curriculum, a team of students, teachers, a training layout, two years of hard work... Maxim's story makes it clear that the Polytechnic University provides an opportunity to implement ideas and, as a bonus, many accompanying factors.
